Chicken Tortellini Alfredo Soup

This one won first place in the soup and stew category at Innovative Systems’ 2023 holiday cook-off, back when I worked there!

Makes
Approximately 3½–4 quarts
Prep
10–15 minutes
Cooking
About 30 minutes on a stove, or 1–4 hours in a crock pot (I usually go 3–4 hours)

Ingredients

Aromatics

  • 2 Tbsp butter
  • Green onion
  • Minced garlic
  • Pepper
  • 1 tsp crushed red pepper
  • Oregano
  • Garlic

Broth

  • 6 cups chicken broth
  • 1 (16 oz) jar alfredo sauce
  • 1 cup sour cream
  • Pecorino romano

Add-ins

  • 2–3 cups chopped chicken (1 bag of precooked fajita chicken)
  • 1 (20 oz) refrigerated cheese tortellini
  • 6 oz chopped spinach

Instructions

  1. Melt butter, sauté onion and garlic — 3–4 minutes. Add the spices right at the end.
  2. Add broth, alfredo sauce, and sour cream. Whisk together.
  3. Add chicken, tortellini, and cheese. Cook 10–15 minutes.
  4. Stir in the spinach right before serving. The residual heat will cook it quickly.

Making It at the Office

I’ve made this recipe for many work events, everyone always loves it. I always bring all the ingredients and cook it right at the office in a crock pot.

I start on high to melt the butter and saute the onions and garlic. Fresh garlic is always best, but jarlic works if you’re feeling lazy. Sometimes I pre slice the onions, but most of the time I bring the whole and chop them right into the crock pot with a pair of scissors.

If you put this together when you get to the office, it will be ready by lunch for sure. I usually let the sauce cook and warm up, then add the tortellini and chicken about an hour before lunch. Then I add the spinach about 10 minutes before lunch. Once it’s lunch time, I set the crock pot to “keep warm”. If you make the mistake of leaving it on high, the tortellini will get very soft and fall apart by the time lunch is over (ask me how I know lol).
